1 lemon cake mix<br />
1 (3.4) instant vanilla pudding mix<br />
4 eggs<br />
1 cup water<br />
1/2 cup olive oil<br />
1/4 cup poppy seeds<br />
<br />
In a large bowl, combine the cake mix, pudding mix, eggs, water and oil. Beat on low for 30 seconds, then on medium for 2 minutes. Fold in poppy seeds. Transfer to a greased and floured 9x13" pan. Bake @ 350 for 30-35 minutes.<br />

Drizzle<br />
2 cup confectioners' sugar<br />
2 TBL water<br />
2 TBL lemon juice<br />
<br />
Mix together and drizzle over cooled cake -or- pour over cake while still warm. (It will absorb into the cake)<br />

I made these sour cream enchiladas the other day for the first time and everyone liked them. They are really quick and easy.<br /><br />Ingredients:<br />12 whole corn tortillas<br />canola oil for frying<br />1 can enchilada sauce (20 oz.)<br />2 cups sour cream<br />3 cups sharp cheddar cheese grated<br />1 cup slice green onions<br />1/2 tsp. cumin<br />1/4 tsp cayenne pepper<br /><br />Preheat oven to 375 degrees.<br />Mix together sour cream, green onions, 1 1/2 cup grated cheese, cumin, cayenne pepper.<br />Heat oil in skillet over medium heat. Heat enchilada sauce in a separate skillet or saucepan.<br />Using tongs, fry tortillas one at a time, for only about 5 to 10 seconds per side (don't allow to crisp.) Remove from oil, then dunk tortilla in enchilada sauce. Lay tortilla on a plate, then spoon a good 2 or 3 tablespoons of the sour cream mixture in the middle. Roll tortilla and place face down in 9x13 pan. Repeat with remaining tortillas.<br />Cover with remaining cheese and bake for 15-20 min.<br /><br />FYI- When I made this I was out of cumin so I left that out and they tasted fine. Also, I used flour tortillas instead of corn and I did not cook them in oil at all. I also did not heat up the enchilada sauce before I dipped the tortillas in them . 2 cans condensed cream of chicken soup<br />

Butter a 11x7 baking dish<br />
Tear a tortilla into pieces and layer the bottom <br />
Layer chicken, olives, peppers, cheese, and soup on top<br />
Cover with pieces of tortilla<br />
Repeat the layering process however many times you want. Do not top off with tortillas though...top of with extra cheese<br />

2 lbs turkey breast (I use whatever turkey I can find in the store)<br />
1/2 tsp rubbed sage <br />
2 jars (12 oz) roasted turkey gravy<br />
1 pkg microwavable mashed potatoes (those pre-made ones work great) <br />
1/2 tsp poultry seasoning<br />
1 tsp Worcestershire sauce<br />
Sliced Sourdough Bread<br />
Paprika <br />

Place turkey in 3-4 Qt. Slow Cooker<br />
Sprinkle with Sage and top with gravy <br />
Cook on low 8-10 hours<br />
Remove turkey from cooker and mix the poultry seasoning and Worcestershire sauce into the gravy<br />
Cook mashed potatoes in microwave<br />
Place turkey on bread and cover with gravy. Top with mashed potatoes and paprika<br />

I got it from my friend Kacey.<br /><br />Mash 4 ripe bananas (set aside)<br /><br />in a small bowl put 1 cup yogurt (any flavor) You can also use sour cream instead of yogurt<br />add 2 tsp. baking soda to the yogurt, stir and let it foam<br /><br />in mixer, cream 1 1/4 cup sugar<br /> 1/2 cup butter<br /> 1/2 cup shortening<br /> 3 eggs<br /><br />add banana mixture and 1 tsp. salt, mix<br />add yogurt and 2 1/2 cups of flour (fold in)<br /><br />makes 2 large loaves or 4 mini<br />bake at 350 for 50 minutes<br /><br />*I like to make a couple batches of banana bread for my kids lunches. I cut it into slices and put each piece in a sandwich bag and stick them in the freezer. Melt butter in a large skillet over medium heat. Add chicken. Brown about 6-8 minutes. Add garlic, onions, Creole seasoning, and black and red peppers. Add bell peppers. Stir. Cover and cook for 5 minutes. Uncover. Stir in cream and let simmer for 2 minutes. Remove from heat and stir in cooked pasta. Add cheese and serve immediately. When Kasey was about 2 years old, Jeff and Nicki were so kind to babysit one night so Matt and I could go out. When they were eating dinner they were trying to get Kasey to eat what they were having, I think it was lasagna. Well Kasey being the very picky eater that she was, did NOT want to eat it. But, Nicki and Jeff persisted and convinced her to try it. She took a bite and said "It's not yucks, it's just yum!" (did I get that right Nick?) What a revelation!
